Slice the focaccia bread in half horizontally and place both halves on a baking sheet.
Layer one half of the bread with American cheese and provolone cheese.
On the other half of the bread, layer the deli turkey, salami, and pepperoni. Fluff the meat as you layer it rather than laying it flat.
Place the baking sheet in the oven to toast the bread, warm the meats, and melt the cheese.
While the sandwich toasts, prepare the grinder sauce. In a mixing bowl, combine mayonnaise, red wine vinegar, salt, pepper, dried oregano, crushed red pepper flakes, and minced garlic. Mix well.
To the bowl with the sauce, add the shredded iceberg lettuce, sliced red onion, and chopped pepperoncini.
Toss the salad ingredients with the sauce until everything is well-coated.
Remove the toasted sandwich from the oven. Top the cheese side with sliced tomatoes and season them with a drizzle of olive oil, salt, and pepper.
Pile the grinder salad mixture onto the meat side of the sandwich.
Sprinkle grated parmesan cheese over the salad.
Place the top half of the bread onto the sandwich, slice in half, and serve immediately.
