Heat oil in a large skillet or wok over medium-high heat. Add the sliced chicken thighs and sear until cooked through.
Push the chicken to one side of the pan and crack an egg into the empty space. Scramble the egg until cooked.
Add the chopped cabbage to the pan and stir everything together.
Pour in the light soy sauce, dark soy sauce, and water. Add the minced garlic and brown sugar.
Add the dried rice noodles directly to the pan. Stir to coat the noodles in the sauce.
Continue to cook, stirring frequently, until the noodles are tender and have absorbed most of the sauce. The sauce should reduce to a glaze.
Serve immediately.
