Place the smoked turkey leg in the bottom of a slow cooker.
Add the diced yellow onion, minced garlic, diced celery, and diced bell pepper.
Top with the fresh green beans.
Add the apple cider vinegar and place the stick of butter on top.
Season generously with garlic powder, onion powder, smoked paprika, black pepper, and Cajun seasoning.
Pour in the chicken broth.
Cover and cook on high for 6 hours.
After cooking, the turkey meat should be falling off the bone. Remove the main bone and any smaller bones.
Shred the turkey meat with tongs and stir to combine everything.
Serve warm, optionally with mashed potatoes, gravy, and cornbread.
