If using fresh garlic, mince it finely. Chop the cooked lobster meat into small pieces.
In a small bowl, combine the softened garlic and herb butter, smoked paprika, garlic pepper, chopped fresh parsley, minced garlic, parmesan cheese, chopped lobster meat, and Old Bay seasoning (if using).
Squeeze the juice of half a lemon into the bowl.
Mix all the ingredients together until well combined into a paste-like mixture.
Spoon the lobster mixture generously onto each oyster on the half shell.
Place the stuffed oysters in an air fryer basket.
Top each oyster with shredded mozzarella cheese.
Cook at 425°F (220°C) for 7 minutes, or until the cheese is melted and bubbly.
Remove from the air fryer and garnish with more fresh parsley and an extra squeeze of lemon juice before serving.
