First, prepare the creamy jalapeño sauce. In a medium bowl, combine minced pickled jalapeños, light mayonnaise, low-fat yogurt, jalapeño pickling liquid, onion powder, garlic powder, cumin, chili powder, paprika, salt, and pepper.
Mix well until the sauce is smooth and fully combined. Set aside.
Prepare the chicken by butterflying the chicken breast. Season both sides generously with taco seasoning.
In a hot pan, cook the chicken for a few minutes on each side until fully cooked through and browned.
Remove the chicken from the pan, let it rest for a few minutes, and then chop it into small, bite-sized pieces.
To assemble the quesadilla, lay a low-carb tortilla flat. On one half, layer the chopped chicken, a sprinkle of low-fat Mexican cheese blend, and a drizzle of the creamy jalapeño sauce.
Fold the other half of the tortilla over the fillings.
Lightly coat a pan with cooking spray over medium heat. Cook the quesadilla on both sides until the tortilla is golden brown and crispy, and the cheese is completely melted.
Remove from the pan, cut into wedges, and serve with hot sauce if desired.
