Dice the pork belly into 2cm cubes, keeping the skin on for texture
Soak dried shiitake mushrooms until soft, then dice
Heat oil in a heavy-bottomed pot over medium heat
Add diced pork belly and sear until browned on all sides
Add minced shallots, garlic, and diced onions, cook until fragrant
Add diced shiitake mushrooms and stir-fry briefly
Add dark soy sauce, light soy sauce, and Shaoxing wine
Add rock sugar, star anise, cinnamon stick, cloves, and white pepper
Pour in chicken stock to just cover the ingredients
Bring to a boil, then reduce heat to very low
Simmer gently for 2-3 hours until pork is fork-tender, stirring occasionally
Meanwhile, prepare soft-centered eggs by boiling for 6-7 minutes, then marinating in soy sauce mixture
Steam jasmine rice and blanch Chinese greens
Serve the braised pork over steamed rice with halved soft-centered eggs and blanched vegetables
