Lychee and Orange Blossom Spritzer

Pro tips

• Strain the puree thoroughly to remove any pulp or seed particles that can make the spritzer gritty.
• Add seltzer gently and stir just before serving to preserve carbonation and fizz.
• Chill both the puree and seltzer before combining for the best temperature and flavor.
• Use fresh lychees when available; canned or frozen lychees will yield a less delicate flavor.

Substitutions

• Orange blossom water → rose water (same amount; changes floral profile)
• Fresh lychees → frozen lychees, thawed (texture may be slightly softer)
• Seltzer → sparkling water or club soda (neutral carbonation works equally well)

Storage & make-ahead

Store the lychee puree in an airtight container in the refrigerator for up to 2 days. Mix with seltzer just before serving.

Equipment

food processor · fine-mesh strainer

Can I make the lychee puree ahead of time?

Yes. Store the puree in an airtight container in the refrigerator for up to 2 days before mixing with seltzer.

How do I remove lychee skin and pit?

Peel away the bumpy outer skin by hand, then cut the fruit in half and remove the pit before processing.

What if I don't have orange blossom water?

You can substitute with rose water (use same amount) or omit it for a pure lychee flavor, though the floral note will be lost.

Can I make this as a single serving?

Yes. Combine ¼ cup puree with ¾ cup seltzer in a glass, then add ice.

Do I need to strain the puree?

Yes. Straining through a fine-mesh strainer removes pulp and seed fragments for a smoother, more refined texture.
