Preheat your oven to 400°F (200°C).
Arrange the thick onion slices in a single layer in a baking dish.
In a small bowl, combine the olive oil, melted butter, chopped fresh sage, chopped fresh thyme, salt, and pepper.
Spoon the herb and oil mixture evenly over each onion slice.
Bake for 30-40 minutes, or until the onions are nicely caramelized and browned on top.
Carefully remove the dish from the oven and pour the vegetable broth into the bottom of the pan.
Return the dish to the oven and bake for another 20-30 minutes, until the onions are extremely soft, tender, and falling apart.
Serve the melting onions immediately, spooning some of the pan sauce over the top. Garnish with fresh thyme if desired.
