Preheat your oven to 375°F (190°C).
In a large bowl, combine the trimmed chicken thighs with olive oil and Italian dressing mix. Mix well with your hands to ensure the chicken is evenly coated.
Arrange the seasoned chicken thighs in a single layer on a baking sheet lined with parchment paper.
Bake for 45 minutes, or until the chicken is cooked through.
Once cooked, remove the chicken from the oven and dice it into bite-sized pieces.
To make the sauce, heat sesame oil in a large pot or pan over medium heat. Add the minced garlic and cook for about 2 minutes until fragrant.
Add the low sodium soy sauce, rice vinegar, ground ginger, chili paste, red pepper flakes, and brown sugar to the pot. Stir to combine.
Bring the sauce to a simmer and let it cook for 5 minutes, allowing it to become thick and bubbly.
Add the diced, cooked chicken to the sauce and stir to coat everything evenly. Heat through.
Serve the bourbon chicken hot over a bed of cooked rice.
