Preheat your oven. Roughly chop the head of cabbage into bite-sized pieces.
Place the chopped cabbage in a large bowl. Drizzle with 2 tablespoons of olive oil and season with salt and pepper.
Toss well to coat, then spread the cabbage in an even layer on a baking sheet.
Roast the cabbage until tender and slightly charred on the edges.
While the cabbage is roasting, prepare the dressing. In a medium bowl, combine the grated Parmesan cheese, Dijon mustard, grated garlic, white wine vinegar, soy sauce, and a pinch of black pepper.
Whisk the dressing ingredients together, then slowly stream in 1/4 cup of olive oil while whisking to emulsify.
Once the cabbage is done roasting, transfer it back to the large bowl.
Pour the Caesar-style dressing over the warm cabbage and toss thoroughly to combine.
Serve immediately while warm.
