Place ground chicken between two sheets of parchment paper. Use a rolling pin to roll it out into a thin rectangle.
Remove the top sheet of parchment paper. Spread pesto over one half of the chicken.
Layer fresh spinach, shredded mozzarella, and chopped sun-dried tomatoes over the pesto.
Using the bottom sheet of parchment paper, carefully fold the empty half of the chicken over the fillings to create a pocket. Press the edges to seal.
In a small bowl, combine breadcrumbs and grated Parmesan cheese. Sprinkle this mixture over the entire outside of the chicken pocket, pressing gently to adhere.
Place the prepared chicken pocket into the basket of an air fryer.
Air fry until the outside is golden brown and crispy, and the chicken is cooked through (approximately 15-20 minutes at 375°F / 190°C).
Remove from the air fryer, slice in half, and serve immediately.
