In a medium bowl, combine the pimento cheese spread, cooked and crumbled bacon, chopped green onions, and honey.
Mix all the ingredients together until well combined.
Lay out the tortillas or flatbreads and spread the pimento cheese mixture in a thin, even layer, leaving about a 1/2-inch border at the far end.
Roll up the tortillas tightly.
Wrap each roll tightly in plastic wrap.
Refrigerate for at least 30 minutes to allow the rolls to firm up.
Once chilled, unwrap the rolls and use a serrated knife to slice them into 1-inch thick pinwheels.
Arrange the pinwheels on a platter and serve.
