Hold the microplane firmly in one hand and the lime in the other.
Starting at the top of the lime, pull the microplane across the surface of the lime in one smooth motion towards your body, as if closing your arms.
Rotate the lime slightly to an un-zested section.
Repeat the zesting motion. Continue to zest and rotate the lime until all the green peel has been removed.
Tap the microplane on the edge of a plate or bowl to release all the collected zest.
