Season the ground beef patties generously with freshly ground black pepper and salt.
In a hot cast iron skillet with a little oil, add the thick onion slices and cook until softened and lightly caramelized.
Remove the onions and add the burger patties to the hot skillet. Cook for 2-3 minutes per side for a good sear.
Flip the patties and immediately top each with a slice of American cheese to melt.
Remove the cheeseburger patties and toast the burger buns cut-side down in the remaining beef fat in the skillet until golden brown.
To make the sauce, combine mayonnaise, ketchup, Dijon mustard, paprika, and garlic powder in a small bowl and mix well.
Assemble the burgers by spreading the sauce on both the top and bottom toasted buns.
Place two cheeseburger patties on the bottom bun, top with the grilled onions, and place the top bun on.
