In a large bowl, combine the ground beef, grated yellow onion, plain Greek yogurt, paprika, cumin, garlic powder, salt, and pepper.
Mix the ingredients thoroughly with your hands until well combined.
Place a scoop of the meat mixture onto a large sheet of parchment paper.
Cover with a second sheet of parchment paper and use a rolling pin to roll the meat into a very thin, even layer.
Remove the top sheet of parchment paper. Tightly roll the meat and the bottom parchment paper into a log.
Place the meat rolls on a sheet pan. Add the sliced tomatoes and red onion to the pan alongside the meat.
Drizzle the vegetables with olive oil and season with salt.
Bake in a preheated oven at 400°F (200°C) for about 20 minutes.
Remove the pan from the oven. Carefully unroll the meat from the parchment paper.
Break the cooked meat into smaller, bite-sized pieces and spread it out on the sheet pan with the roasted vegetables.
Return the pan to the oven and broil for about 5 minutes, or until the meat is golden brown and crispy at the edges.
To assemble, spread garlic aioli on a warm pita bread.
Top with the broiled beef, roasted tomatoes, and red onions.
Add pickles and finish with a sprinkle of ground sumac.
Fold the pita and serve immediately.
