First, prepare the peanut lime dressing. In a measuring cup or small bowl, combine sesame oil, soy sauce, rice wine vinegar, minced ginger, minced garlic, peanut butter, sriracha, honey, and lime juice.
Add water to thin the dressing to your desired consistency and whisk everything together until smooth. Set aside.
Cook the vermicelli noodles according to package directions. Drain and rinse with cold water.
Sauté the shrimp in a pan over medium-high heat until pink and cooked through. Season with salt and pepper to taste.
In a large salad bowl, combine the cooked vermicelli noodles, cooked shrimp, shaved carrots, chopped cucumber, shredded red cabbage, fresh mint, sliced jalapeño, diced avocado, and roasted peanuts.
Pour the prepared peanut lime dressing over the salad.
Toss everything together until all ingredients are well-coated in the dressing. Serve immediately with extra lime wedges if desired.
