Preheat your oven to 375°F (190°C).
On a lightly floured surface, unroll the crescent dough sheet and cut it into two equal squares.
On each square, layer a pile of shredded cheddar and pepper jack cheese.
Place one cooked breakfast sausage patty on top of the cheese on each square.
Top each sausage patty with a portion of the scrambled eggs.
Season the eggs with salt and black pepper to your liking.
Sprinkle a little more shredded cheese over the top of the eggs.
Fold each corner of the dough into the center, completely enclosing the filling. Pinch the seams to seal.
Flip the pockets over and place them seam-side down on a baking sheet.
Beat one egg to create an egg wash and brush it over the tops of the pockets.
Generously sprinkle everything bagel seasoning over the egg wash.
Bake for 13 minutes at 375°F, or until golden brown.
Allow the pockets to cool for 3-5 minutes before cutting and serving.
