Preheat your oven to 400°F (200°C).
Spray a 12-cup muffin tin with cooking spray.
Press one wonton wrapper into each cup of the muffin tin.
Sprinkle a small amount of shredded cheese into each wonton cup.
Place a second wonton wrapper on top of the cheese in each cup, pressing it down gently.
Add a spoonful of the cooked, seasoned ground beef into each cup.
Top the beef with the remaining shredded cheese.
Bake for 10-15 minutes, or until the wonton wrappers are golden brown and crispy.
Remove from the oven and let cool for a minute before adding toppings.
Top the taco cups with diced tomato, shredded lettuce, diced avocado, a drizzle of sour cream, and sliced green onions.
Serve immediately and enjoy.
