Slice the beefsteak tomato into two thick slices to act as the 'buns' for the sandwich.
Sprinkle the cut sides of the tomato slices with flaky sea salt.
In a small bowl, combine the cottage cheese and Dijon mustard, mixing until well combined.
Shred the thinly sliced turkey and place it on top of one of the tomato slices.
Spread the cottage cheese and mustard mixture over the shredded turkey.
Top with a handful of arugula.
Place the second tomato slice on top to complete the sandwich.
