Wrap each hot dog tightly with one slice of bacon.
Place the bacon-wrapped hot dogs in a skillet over medium heat. Cook, turning occasionally, until the bacon is crispy on all sides.
While the hot dogs are cooking, slice the onion and jalapeños.
In a separate skillet, heat avocado oil over medium heat. Add the sliced onions, sliced jalapeños, and the whole jalapeño. Sauté until softened and lightly browned.
Once the hot dogs are fully cooked and the bacon is crisp, remove them from the skillet and set aside.
When the vegetables are cooked to your liking, remove them from the skillet and set aside.
Melt butter on a griddle or in a clean skillet over medium heat.
Place the hot dog buns, cut-side down, on the buttered griddle and toast until golden brown.
To assemble, spread a layer of mayonnaise inside each toasted bun.
Place a bacon-wrapped hot dog into each bun.
Add ketchup and yellow mustard to your liking.
Top generously with the sautéed onions and jalapeños. Serve immediately.
