Preheat your oven to 400°F.
Line a baking sheet with parchment paper and place the bacon slices on it. Put the bacon in the oven to cook while you prepare the other ingredients.
Finely slice the green onion.
In a small bowl, crack the egg. Add the cottage cheese, sliced green onions, salt, and pepper.
Whisk the egg mixture together until well combined.
Heat a small non-stick pan over medium heat. Add the butter and let it melt.
Pour the egg mixture into the hot pan, cover with a lid, and let it steam and cook until set, about 1-2 minutes.
Once the egg is mostly cooked through, flip it and cook for another 30 seconds on the other side.
While the egg finishes cooking, slice the croissant in half. Rip the slice of pepper jack cheese in half and place one piece on each half of the croissant.
Remove the cooked bacon from the oven.
Fold the cooked egg to fit the croissant and place it on the bottom half. Top with the two slices of bacon.
Place the top of the croissant on the sandwich, slice in half, and serve immediately, optionally with a side of fresh fruit.
