Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Unroll the crescent roll dough and form it into a log.
Cut the dough log into 21 equal pieces.
Place the wheel of brie in the center of the prepared baking sheet.
Using a small knife, score the top of the brie in a diamond pattern. This helps it bake evenly.
Arrange 19 of the dough pieces around the brie to form the bunny's face and body.
Shape the remaining two dough pieces into arches and place them at the top to create the bunny's ears.
In a small bowl, combine the melted butter and minced garlic.
Brush the garlic butter mixture generously over all the dough pieces and the top of the brie.
Sprinkle the chopped fresh parsley over everything.
Bake for 15-20 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
Garnish with a sprinkle of flaky sea salt if desired, and serve immediately for the best cheese pull.
