Cook chicken thighs until done, then chop into bite-sized pieces. Set aside.
In a large pot or skillet, heat sesame oil over medium heat.
Add the minced garlic and cook for about 4 minutes until fragrant.
Pour in the low sodium soy sauce, packed brown sugar, and rice vinegar.
Add sriracha to your desired level of spiciness and stir to combine.
Stir in the ground ginger and red pepper flakes.
Add the cooked, chopped chicken to the pot and stir to coat with the sauce.
Simmer for 15 minutes, or until the sauce has thickened.
Serve the bourbon chicken over white rice with a side of broccoli, and garnish with sliced green onions.
