Ingredients: 1 lb cooked crawfish tails, chopped; 2 green onions, chopped; 1/2 yellow bell pepper, finely diced; 2 tbsp Cajun seasoning, divided; 1 tsp garlic powder; 1/2 tsp black pepper; 1 large egg; 1 cup crushed Ritz crackers; 1 tbsp olive oil; 1/2 cup mayonnaise; 2 tbsp ketchup; 1 tsp Worcestershire sauce; 1 tsp lemon juice; 4 brioche buns; 4 leaves butter lettuce

Finely chop the green onions and yellow bell pepper. Roughly chop the crawfish tails.

In a large bowl, combine the chopped crawfish, green onions, bell pepper, 1.5 tbsp Cajun seasoning, garlic powder, black pepper, egg, and crushed crackers.

Mix everything together until well combined, then form the mixture into 4 equal-sized patties.

Heat olive oil in a large skillet over medium heat. Carefully place the patties in the skillet and cook for about 3 minutes per side, until golden brown and cooked through.

While the patties are cooking, prepare the sauce. In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, lemon juice, and the remaining 1/2 tbsp of Cajun seasoning until smooth.

Remove the cooked patties from the skillet and let them rest for a minute.

Assemble the burgers by placing a leaf of butter lettuce on the bottom bun, followed by a crawfish patty. Top with a generous amount of the Cajun sauce and the top bun.
