Open and drain the cans of shrimp. Add the drained shrimp to a large mixing bowl.
To the bowl, add the diced red onion, cucumber, tomato, chopped cilantro, and diced jalapeño.
Add the diced avocado to the bowl.
Squeeze in the juice of one lime and pour in the Clamato juice.
Season with salt and black pepper to taste.
Gently mix all the ingredients until well combined.
Squeeze in the juice of half a lemon for extra brightness and mix one last time.
For a fun presentation, spoon the ceviche back into the empty, cleaned shrimp cans.
Drizzle with your favorite hot sauce and serve immediately with tortilla chips.
