Caprese Pesto Chicken Sandwich

Heat about 1 tablespoon of olive oil in a skillet over medium heat.

Add the frozen pre-cooked chicken fillets to the skillet and cook until heated through and browned on both sides.

While the chicken cooks, slice the ciabatta roll in half horizontally.

Drizzle the remaining olive oil on the cut sides of the ciabatta roll and toast in a separate pan or toaster until golden brown.

Once the chicken is heated through, top each fillet with slices of fresh mozzarella.

Cover the skillet with a lid to help the cheese melt completely.

Spread basil pesto generously on both toasted halves of the ciabatta roll.

On the bottom half of the roll, layer fresh spinach, followed by the sliced tomatoes.

Season the tomatoes with salt, black pepper, and a drizzle of balsamic glaze.

Place the chicken with melted mozzarella on top of the tomatoes.

Place the top half of the ciabatta roll on top to complete the sandwich.

Slice the sandwich in half and serve immediately.
