In a large pot over medium-high heat, add olive oil. Once hot, add the ground beef.
Use a meat chopper or spoon to break up the beef as it begins to cook. Season with kosher salt.
Add the diced onions and continue to cook, stirring frequently, until the beef is fully browned and the onions are soft.
Stir in the ground cumin and dried oregano.
Once the beef is cooked through, drain off any excess fat and transfer the mixture to a large mixing bowl.
To the warm beef mixture, add the dry ranch seasoning, Mexican crema, and chopped cilantro. Stir well to combine.
Add half of the shredded cheddar cheese (about 2 cups) to the bowl and mix until incorporated.
Line a large baking sheet with parchment paper. Arrange the tortilla chip scoops in a single layer.
Carefully fill each tortilla scoop with the beef and cheese mixture.
Top the filled scoops with the remaining 2 cups of shredded cheddar cheese.
Bake in a preheated 200°F (93°C) oven for 5-10 minutes, or just until the cheese is melted.
Serve immediately, optionally over a bed of mixed greens with a drizzle of ranch dressing.
Store cooled taco bites in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 5–8 minutes until warmed through.
Yes. Assemble the taco bites up to 24 hours ahead, cover, refrigerate, then bake when ready. Add 2–3 minutes to bake time if starting cold.
Sour cream or Greek yogurt works well. Use the same amount or thin with a tablespoon of milk if too thick.
Cheese should be melted and lightly golden, and the beef mixture should be heated through. Bake until cheese bubbles at the edges.
Yes. Scale all ingredients by 2 and bake in batches or use two baking sheets, rotating halfway through for even cooking.
