Cut two large flour tortillas in half.
On one tortilla half, place a slice of provolone cheese.
Top with a portion of the cooked ground beef and pepper mixture, followed by a sprinkle of shredded mozzarella cheese.
Brush the edges of the tortilla with melted butter.
Fold the tortilla half over the filling to create a triangle, pressing the edges to seal.
Repeat to create four filled triangles.
Line a round baking pan with parchment paper and arrange the four triangles in the pan to form a circle.
Brush the tops of the tortillas with any remaining melted butter.
Top generously with the remaining shredded mozzarella cheese.
Bake until the cheese is melted, bubbly, and golden brown.
Remove from the oven, slice, and serve hot.
Store covered in the refrigerator up to 3 days. Reheat in a 350°F oven for 10–15 minutes until warmed through and cheese softens.
Yes. Assemble the pie, cover with plastic wrap, and refrigerate up to 24 hours before baking. Add 5–10 minutes to bake time if chilled.
Use cheddar, Monterey Jack, or American cheese. Provolone provides a mild, creamy melt; sharper cheeses will intensify flavor.
Bake until the cheese is golden and bubbly at the edges, typically 20–25 minutes at 375°F. The tortilla should be lightly browned.
Corn tortillas are more fragile and may tear when folded. Flour tortillas hold the filling better and create a sturdier pie structure.
Refrigerate in an airtight container up to 3 days. Reheat in a 350°F oven for 10–15 minutes until cheese melts again.
