Lay out the mini tortillas on a piece of parchment paper.
Divide the ground beef into four 90g portions and place one ball of beef on each tortilla.
Press the ground beef flat onto each tortilla, spreading it evenly to the edges.
Season the beef generously with salt, black pepper, and smoked paprika.
Heat a large non-stick pan over medium heat and coat with cooking spray.
Place a taco in the pan, meat-side down. Press down firmly with your hand or a spatula to get a crispy sear. Cook for 2-3 minutes.
Flip the taco and cook for another 1-2 minutes to crisp up the tortilla.
Place a slice of cheese on top of the beef patty and allow it to melt.
Remove the cooked taco from the pan and repeat the process with the remaining tacos.
To assemble, top each taco with shredded lettuce, diced red onion, and diced pickles.
Drizzle generously with burger sauce.
Fold the taco in half and enjoy immediately.
