Cook pasta according to package instructions. Reserve 1/2 cup of the pasta water before draining.
While the pasta is cooking, chop the broccoli into small florets and dice the onion.
Cut the chicken breasts into small, bite-sized cubes.
In a bowl, combine the chicken cubes with mixed herbs, paprika, salt, and chili flakes. Mix well to coat evenly.
Heat cooking oil in a large pan over medium-high heat. Add the diced onion and fry for 2-3 minutes until softened.
Add the seasoned chicken to the pan and fry for about 5 minutes, stirring occasionally, until cooked through.
Two minutes before the pasta is ready, add the broccoli florets to the pot to cook with the pasta.
Add the cream cheese to the pan with the chicken and stir until it melts and creates a creamy sauce.
Stir in the sweetcorn and the reserved 1/2 cup of pasta water. Cook for another 2-3 minutes.
Drain the pasta and broccoli and add them to the pan with the chicken and sauce.
If desired, add grated Parmesan cheese. Stir everything together until well combined. Serve immediately and enjoy.
Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop with a splash of cream or milk to restore creaminess.
Yes. Use frozen broccoli florets directly without thawing; add 1-2 minutes extra cooking time to ensure tenderness.
Add cream cheese in small pieces off the heat and stir constantly until fully melted into the warm pasta liquid.
Cook the pasta and chicken separately, then combine with sauce and vegetables just before serving. Store components separately in airtight containers for up to 3 days.
Use sour cream, Greek yogurt, or heavy cream mixed with parmesan cheese for a similar creamy texture.
Chicken cubes are done when they reach an internal temperature of 165°F (74°C) or show no pink inside when cut.
