In a large bowl, combine the contents of the Caesar salad kit (lettuce, croutons, parmesan, and dressing).
Toss the salad until well combined and place it in the refrigerator to chill while you prepare the tacos.
Divide the ground chicken into three equal portions (about 1/3 lb each).
Press one portion of ground chicken onto a flour tortilla, spreading it in a thin, even layer to the edges. Repeat with the remaining chicken and tortillas.
Season the chicken side of the tortillas generously with Greek seasoning.
Preheat a griddle or large skillet over medium to medium-high heat.
Add cooking oil to the hot surface and spread it evenly.
Place the tortillas chicken-side down on the griddle and cook for 3-5 minutes, until the chicken is fully cooked and browned.
Flip the tacos, turn off the heat, and let the tortillas toast for about a minute in the residual heat.
Remove the tacos from the griddle, folding them into a taco shape.
Top each taco with the chilled Caesar salad and serve immediately.
