In a bowl, toss the chopped romaine lettuce and croutons with most of the Caesar dressing until coated. Set aside.
Season the ground chicken with salt and pepper.
Spread a thin, even layer of the seasoned ground chicken onto one side of each flour tortilla, pressing it down firmly.
Heat cooking oil in a large non-stick skillet over medium-high heat. Carefully place the tortillas chicken-side down in the hot pan.
Cook for 3-4 minutes, until the chicken is cooked through and golden brown. Flip and cook for another minute to toast the tortilla.
Transfer the cooked chicken tortillas to a plate.
Top each tortilla with the prepared Caesar salad.
Drizzle with the remaining Caesar dressing and garnish with grated Parmesan cheese and chopped fresh parsley.
Finish with a crack of fresh black pepper and serve immediately.
Store cooked chicken refrigerated in an airtight container up to 3 days; crispy tortillas up to 2 days in a sealed container. Reheat chicken gently in a pan over low heat; assemble fresh with lettuce and dressing just before eating.
Yes. Ground turkey, cooked shredded chicken, or seasoned ground beef work well as 1:1 substitutes with similar cooking times.
Pan-fry the tortillas in oil until golden and crispy before filling, and assemble just before serving to prevent sogginess from the dressing.
Prepare the cooked chicken and crispy tortillas up to 4 hours ahead. Assemble with fresh lettuce and dressing immediately before eating.
Crushed tortilla chips, panko breadcrumbs toasted in oil, or toasted bread cubes offer similar crunch and texture.
Double or triple all ingredients proportionally. Cook chicken in batches if needed to avoid overcrowding the pan.
