Heat a wok over maximum heat.
Add cooking oil to the hot wok, then add the sliced chicken.
Stir-fry the chicken until it's cooked through.
Using a strainer, remove the chicken from the wok and set it aside, leaving the oil in the wok.
Crack an egg into the hot oil and scramble it quickly.
Add the Pad Thai sauce to the wok and mix with the scrambled egg.
Add the soaked rice noodles and the cooked chicken back into the wok.
Add bean sprouts and chopped garlic chives, then stir-fry everything together until the noodles have absorbed the sauce and are tender.
Plate the Pad Thai.
Garnish with crushed peanuts and serve immediately.
