Chicken Parmesan Sandwich with Vodka Sauce

Finely mince the shallot, chili pepper, and garlic. Chop the fresh basil and grate the parmesan cheese. Set aside.
Prepare a breading station with three shallow dishes. Place flour in the first, breadcrumbs in the second, and whisked eggs with salt, pepper, and garlic powder in the third.
Slice each chicken breast in half horizontally to create four thin cutlets. Place the cutlets in a large zip-top bag and pound them to an even, thin consistency.
Dredge each chicken cutlet first in the flour, then dip in the egg wash, and finally coat thoroughly with the breadcrumbs, pressing to adhere.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
Carefully place the breaded chicken cutlets in the hot oil and fry for 3-4 minutes per side, until golden brown and cooked through.
Remove the cooked chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
To make the sauce, heat olive oil in a separate, clean skillet over medium heat. Add the minced shallot and chili pepper and sauté until softened.
Add the minced garlic and cook for another minute until fragrant. Then, stir in the tomato paste and cook for 1-2 minutes.
Deglaze the pan with vodka, scraping up any browned bits. Let it cook for a minute to allow the alcohol to burn off.
Pour in the heavy cream, season with black pepper, and stir to combine. Let the sauce simmer and thicken.
Stir in the grated parmesan cheese and about half of the chopped basil until the cheese is melted and the sauce is smooth.
Slice the baguette for sandwiches and place on a parchment-lined baking sheet. Drizzle the cut sides with olive oil.
Place the fried chicken cutlets on the baking sheet. Spoon the vodka sauce over each cutlet, then top with fresh mozzarella, a sprinkle of parmesan, and the remaining fresh basil.
Broil for 2-3 minutes, until the cheese is melted and bubbly and the bread is toasted.
Assemble the sandwiches by placing the chicken parmesan on the toasted baguette. Garnish with extra sauce, basil, and parmesan if desired, and serve immediately.
