Slice the jalapeños into rings and set aside. Wear gloves to protect your hands.
In a medium pot, combine the apple cider vinegar, sugar, minced garlic, turmeric, and celery seeds.
Bring the mixture to a simmer over medium heat, stirring until the sugar is completely dissolved.
Add the sliced jalapeños to the pot and stir to combine.
Bring the mixture back to a boil, then reduce the heat and simmer for about 5 minutes, until the jalapeños have softened slightly but are still vibrant.
Using a slotted spoon, transfer the jalapeños into a clean glass jar.
Pour the hot syrup over the jalapeños in the jar, ensuring they are fully submerged.
Let the jar cool, then seal and refrigerate overnight to allow the flavors to meld.
To serve, place a block of cream cheese on a plate. Top generously with the cowboy candy and a spoonful of the syrup.
Drizzle with honey if desired and serve with toasted baguette slices.
