In a large bowl, season the chicken drumsticks with Creole seasoning, onion powder, garlic powder, dried thyme, and paprika. Mix well to coat evenly.
Arrange the seasoned chicken in a single layer in a baking dish.
Top the chicken with sliced bell peppers.
In a separate bowl or measuring cup, whisk together the cream of chicken soup, chicken broth, and cornstarch until smooth.
Pour the sauce mixture evenly over the chicken and peppers.
Cover the baking dish with aluminum foil and bake at 400°F for 1 hour.
After 1 hour, remove the foil and baste the chicken with the pan juices.
Return the dish to the oven uncovered and bake for an additional 30 minutes, or until the chicken is cooked through and the sauce has thickened.
