Place chicken breasts in the bottom of a slow cooker.
Season the chicken with paprika, garlic powder, black pepper, Italian seasoning, and salt.
Pour the cream of chicken soup and the can of diced tomatoes and green chiles over the chicken. Stir slightly to ensure the chicken is covered.
Cover and cook on high for 4 hours.
After 4 hours, remove the cooked chicken from the slow cooker and set it aside.
Bring a large pot of salted water to a boil and cook the spaghetti according to package directions.
Add most of the shredded Colby Jack cheese (reserving some for topping) and the sour cream to the sauce in the slow cooker. Whisk until smooth and combined.
Shred or cube the cooked chicken.
Return the chicken to the slow cooker and stir it into the sauce.
Drain the cooked spaghetti and add it to the slow cooker.
Toss everything together until the spaghetti is fully coated in the creamy sauce.
Top with the remaining shredded cheese, place the lid back on for a few minutes to allow the cheese to melt, then serve.
