In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks.
Once browned, drain any excess grease. Stir in the taco seasoning and 1/2 cup of water. Simmer until the liquid has mostly absorbed.
Remove the seasoned beef from the skillet and set aside in a bowl.
Add olive oil to the same skillet. Add the diced onion and uncooked rice.
Sauté for a few minutes, stirring frequently, until the rice is lightly toasted and starts to change color.
Pour in the chicken broth, 2 cups of water, tomato sauce, and tomato chicken bouillon powder. Stir everything together.
Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed the liquid.
Once the rice is cooked, spread the reserved ground beef evenly over the top.
Drizzle the queso over the beef and spread it out.
Top with tortilla strips and shredded cheese.
Cover the skillet again for a few minutes to allow the cheese to melt completely.
Uncover and drizzle with sour cream and chipotle sauce before serving. Add taco sauce to individual servings if desired.
