Place the chicken breasts in the bottom of a slow cooker.
Season the chicken with paprika, onion powder, and garlic powder.
Add the diced tomatoes and green chilies, chipotle peppers in adobo, and diced red bell pepper.
Stir to combine, cover, and cook on high for 3 hours.
Towards the end of the cooking time, cook the pasta according to package directions. Drain and set aside.
Once the chicken is cooked through, shred it directly in the slow cooker using two forks.
Add the cooked pasta, shredded mozzarella, and chipotle cream cheese to the slow cooker.
Stir everything together until the cheese is melted and the sauce is creamy and well combined.
Portion the finished pasta into six meal prep containers.
