Peel the potatoes. Flatten each side to create a rectangular block, then slice into squares about 1/2-inch thick.
Place a chopstick next to a potato slice to act as a stopper. Carefully make thin, parallel cuts across the potato, stopping when your knife hits the chopstick.
Rotate the potato slice 90 degrees and repeat the cuts to create a crosshatch pattern.
In a small bowl, combine the melted butter, chopped parsley, minced garlic, salt, black pepper, oregano, and grated parmesan cheese. Mix well.
Arrange the scored potato slices on a baking sheet lined with parchment paper.
Brush the garlic butter mixture generously over the top and bottom of each potato slice.
Bake at 400°F (200°C) for 20 minutes.
Remove the potatoes from the oven, brush with more of the garlic butter mixture, and return to the oven to bake for another 20 minutes, or until golden brown and crispy.
Garnish with additional grated parmesan cheese and fresh parsley before serving.
