Crispy Loaded Tater Tot Cups

Preheat oven to 425°F (220°C). Brush a 12-cup muffin tin with some of the melted garlic butter.

Place 5-6 frozen tater tots into each muffin cup.

Bake for 10-15 minutes, until the tater tots are thawed and partially cooked.

Remove the tin from the oven. Use the bottom of a small glass to firmly press down on the tater tots in each cup, forming a cup shape with raised sides.

Brush the inside of the newly formed tater tot cups with more melted garlic butter.

Sprinkle a generous amount of shredded cheddar cheese into each cup.

Return the tin to the oven and bake for another 10-15 minutes, or until the cups are golden brown and crispy, and the cheese is fully melted.

While the cups are baking, cook the beef bacon in a skillet over medium heat. If desired, sprinkle with brown sugar for a candied effect. Cook until crispy, then transfer to a paper towel-lined plate and crumble once cooled.

Carefully remove the finished tater tot cups from the muffin tin and arrange on a serving platter.

Top each cup with a dollop of sour cream, crumbled beef bacon, a little more shredded cheese, and a sprinkle of chopped green onions.

Serve immediately and enjoy.
