In a small bowl combine Mayonnaise and Italian Seasoning. Mix until combined.

In a separate small bowl combine olive oil, red wine vinegar, sugar, salt, pepper, and spicy mustard. Whisk until well blended.

Spread mayonnaise on the inside of each slice of bread. On the bottom slice of each slice of bread begin layering lunch meats. Begin with Prosciutto, Salami, Pepperoni, Provolone, Onion (optional), and tomatoes.

Sprinkle coarse black pepper over tomatoes. In a small bowl add Arugula and drizzle with 1 Tablespoon of vinegar dressing. Toss to coat. Save extra dressing for dipping if desired.

Place arugula with dressing on top of sliced tomato. Add top slice of sour dough on top of the arugula and gently press down. Cut sandwich in half and serve immediately.
