Prepare your protein. The creator uses pre-cooked crispy tofu, which is then sliced into strips.
Lay a large tortilla flat on a cutting board. Make a single cut from the center of the tortilla down to the bottom edge.
Imagine the tortilla is divided into four quadrants. On the bottom-left quadrant, add lettuce and pickled red onions.
On the top-left quadrant, add tomato slices.
On the top-right quadrant, add shredded cheese.
On the bottom-right quadrant, arrange the crispy tofu strips and drizzle with your sauce of choice.
Starting with the bottom-left quadrant (lettuce), fold it up over the top-left quadrant (tomato).
Fold that section over to the right, covering the top-right quadrant (cheese).
Finally, fold the entire packet down over the bottom-right quadrant (tofu) to create a triangular pocket.
Place the folded wrap onto a preheated panini press or contact grill and toast until golden brown and the cheese is melted.
