Dice the ham steak into small squares.
Heat bacon grease (or oil/butter) in a large skillet over medium-high heat.

Add the chopped onion and cook for about one minute, stirring to combine.
Add the chopped cabbage to the skillet.
Cover the skillet and allow the cabbage to cook down and wilt.
Season with seasoned salt or salt and pepper to your preference. Stir to combine.
Continue to cook, stirring occasionally, for 10-15 minutes until the cabbage is very soft and tender.
Serve hot as a main dish or a side dish.

Cook until the cabbage is tender and slightly caramelized at the edges, about 12–15 minutes. It should still have a slight bite, not mushy.
Chop cabbage, onion, and ham up to 2 days ahead. Store separately in airtight containers. Cook fresh when ready to serve.
A center-cut ham steak or thick-sliced deli ham works well. Avoid pre-cooked, heavily smoked varieties that can overpower the dish.
