For a quick soak, place the dried beans in a large pot with water, bring to a boil, and cook for 2 minutes.
Remove the pot from the heat, cover, and let the beans soak for 1 hour.
After soaking, drain the water from the beans.
Transfer the soaked and drained beans to a roaster oven or slow cooker. Add enough hot water to cover the beans.
Season the beans with salt, then add the ham bone and shortening to the pot.
Cover the roaster and turn it on high (around 400°F) until the beans come to a boil.
Once boiling, reduce the heat to a simmer (around 350°F).
Continue to cook for 2.5 to 3 hours, or until the beans are tender.
Once cooked, stir and serve hot.
