In a large, microwave-safe bowl, combine the thinly sliced shallots and oil. Stir to ensure the shallots are fully submerged.
Microwave on full power for 5 minutes.
Carefully remove the hot bowl from the microwave and stir the shallots. This helps them brown evenly.
Return to the microwave and continue to cook in 1-2 minute intervals, stirring between each, until the shallots are golden brown and crispy. This may take another 5-10 minutes depending on your microwave.
Using a slotted spoon, transfer the fried shallots to a paper towel-lined plate to drain excess oil.
Season with salt while they are still hot.
