In a large bowl, combine the chicken thighs, avocado oil, and sweet BBQ rub.
Toss with your hands until the chicken is thoroughly and evenly coated with the seasoning.
Preheat a griddle or large skillet over medium heat and add a little cooking oil.
Place the seasoned chicken thighs on the hot griddle and cook until golden brown, caramelized, and cooked through, flipping once.
While the chicken cooks, prepare the lettuce by cutting the head of iceberg into four equal wedges.
To assemble, place a lettuce wedge on a plate.
Drizzle the wedge generously with ranch dressing.
Slice the cooked chicken thighs into strips.
Top the lettuce wedge with the sliced grilled chicken.
Arrange the halved grape tomatoes on and around the salad.
Sprinkle the crumbled bacon over the top.
Finish with a sprinkle of blue cheese crumbles and serve immediately.
