Cut a thawed sheet of puff pastry into rectangles.
Spread a thin layer of Dijon mustard onto each pastry rectangle.
Layer two slices of Swiss cheese on top of the mustard.
Fold a few slices of deli ham and place them on top of the cheese.
Fold two opposite corners of the puff pastry over the filling, pinching them together in the center to seal.
Place the assembled pastries on a parchment-lined baking sheet.
Brush the tops of the pastries with a beaten egg.
Sprinkle generously with everything bagel seasoning.
Bake at 400°F (200°C) for 15-20 minutes, or until golden brown, puffed, and the cheese is melted.
