Wash the strawberries and remove the stems.
Add the strawberries, lemon juice, honey, water, and optional elderberry syrup to a food processor.
Blend all ingredients until you have a smooth mixture.
Pour the fruit mixture into a saucepan.
Add the agar agar powder to the saucepan. The creator uses a ratio of 1 teaspoon of agar agar for every 1 cup of mixture.
Bring the mixture to a boil over medium heat, whisking constantly.
Once boiling, reduce the heat to low and continue to whisk for another 2 minutes.
Carefully transfer the hot mixture into silicone gummy molds using a syringe or dropper.
Let the gummies set for about 30 minutes at room temperature or in the refrigerator.
Once set, remove the gummies from the molds and enjoy.
