Thinly slice the cucumber, red onion, and jalapeño.
Place the sliced red onions in a bowl of ice water to reduce their sharpness. Set aside.
To make the optional crab salad, combine chopped imitation crab, Japanese mayonnaise, sugar, salt, and black pepper in a bowl. Add sriracha if you'd like it spicy.
Mix the crab salad until well combined and set aside.
Prepare the spicy mayo drizzle by whisking together Japanese mayonnaise and sriracha in a small bowl until smooth. Set aside.
Cut the sushi-grade tuna into bite-sized cubes.
In a separate bowl, combine the cubed tuna with soy sauce, sesame oil, sugar, and toasted sesame seeds.
Drain the soaked red onions and add them to the tuna, along with the sliced green onions.
Gently mix the tuna and let it marinate for about 15 minutes.
To assemble, add a base of cooked sushi rice to each bowl.
Arrange the crab salad, sliced cucumbers, sliced jalapeños, and diced avocado on top of the rice.
Add a generous portion of the marinated tuna poke to each bowl.
Garnish with masago and drizzle with the prepared spicy mayo.
